My watch strap was breaking and I couldn't bear the thought of having to choose one online so I just made a new one.
1. Cut two bits of stabiliser or interfacing twice as long as each strap you want to make, and 2-3mm narrower than your strap needs to be.
2. Trim the four corners off each strip of interfacing/stabiliser.
3. Cut some thin fabric, one for each strip of interfacing/stabiliser. Make them about an inch longer than the stabiliser, and about 4x as wide.
4. Flat-roll the fabric around the stabiliser. Pin. It's okay that the raw edges are exposed on one side.
5. Fold the ends of the fabric around the ends of the stabiliser. This may require some careful trimming. Fold the corners in first, and then fold the end down, and clip.
6. Fold each strap in half with the raw edges sandwiched into the middle and sew around the edge of the strap, but leave a couple of millimetres extra space at the straight end for the watch pin to go through.
7. Add pops! I used four to be extra cautious but it feels extremely secure, I think it would be fine with three or even two. Recommend doing the knobbly ones first, so you can press the knobble into the facing fabric; it leaves a little dent so you can make a small mark with a fabric marker, to get your hole-side pop in exactly the right place.
